Prep: 5 minutes

Cook: 20 minutes

Ingredients:

  • 1 Tbsp. Simple Truth Organic™ Canola Oil
  • 1 lb. Simple Truth™ Boneless Chicken Breasts, cut into ½” pieces
  • 3 cups broccoli florets
  • 1 cup long-grain white rice
  • 1½ cups Simple Truth™ Chicken Broth
  • 1 jar (12 oz.) Kroger Brand Cheese Sauce
  • Pinch of salt
  • Pinch of black pepper

Directions:

  1. Set programmable pressure cooker to sauté; allow to preheat.
  2. Add oil and chicken; stir for 2 minutes.
  3. Add salt, pepper, broccoli and rice in that order; do not stir.
  4. Add chicken broth. Cover, lock and set to steam for 4 minutes. Use quick release to vent steam.
  5. Remove lid. Add cheese sauce, stir and serve.

5-Ingredient Chicken Enchiladas

Not only are these enchiladas family-friendly, but they're time and budget-friendly, too!

Cook: 15 minutes

Ingredients:

  • 1 rotisserie chicken, picked from bones and diced
  • 8 large flour tortillas
  • 1 can (10 oz.) enchilada sauce, divided
  • 2½ cups shredded cheese, divided
  • 1 can green chiles
  • Fresh cilantro, for garnish
  • Salsa, for garnish
  • Sour cream, for garnish

Directions:

  1. Preheat oven to 350°F.
  2. In large bowl, mix diced chicken, 1½ cups shredded cheese, green chiles and ½ cup enchilada sauce.
  3. Divide chicken-cheese filling evenly between 8 tortillas (about ½ cup in each tortilla). Roll each tortilla tightly and place seam-side down in a 9”x12” baking dish.
  4. Pour remaining enchilada sauce over tortillas. Top with cheese (add ½ cup or more, according to taste).
  5. Bake 15 minutes, or until cheese is hot and bubbly and internal temperature has reached 165°F. Top with fresh cilantro, salsa or sour cream, if desired. Refrigerate covered. Eat leftovers within 2 to 3 days.

Chicken Noodle Soup

Perfect for a cozy evening, this one-pot chicken noodle soup is easy to put together and requires minimal cleanup.

Cook: 30 minutes

Ingredients:

  • 2 Tbsp. olive oil
  • 1 yellow onion, chopped
  • ¼ teaspoon salt
  • 1½ cups carrots, sliced
  • 1 cup celery, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 1 lb. boneless and skinless chicken breasts
  • 3 cups extra wide egg noodles
  • ¼ tsp. ground pepper
  • Fresh parsley, to serve

Directions:

  1. In Dutch oven over medium heat, add oil. Once warm, add onion and salt. Cook about 5 minutes, until tender. Add carrots and celery. Continue cooking about 5 to 7 minutes, until tender. Add garlic; continue cooking 1 to 2 minutes.
  2. Add broth; bring to boil. Add chicken breast; lower heat to simmer. Cover. Continue cooking 8 to 10 minutes, until chicken has reached an internal temperature of 165°F. Remove chicken to cutting board. Use fork to shred chicken into bite-size pieces.
  3. Add egg noodles; bring to boil. Continue cooking 5 to 8 minutes, until noodles are tender. Add shredded chicken back to pot. Season with pepper.
  4. Serve with fresh parsley. Refrigerate leftovers.

Grilled Chicken Caesar Salad

This light yet filling salad is easy to put together and full of bright and satisfying flavor.

Prep: 30 minutes

Cook: 20 minutes

Ingredients:

  • 3 chicken breasts
  • 1 cup lemon herb salad dressing
  • 6 cups romaine lettuce, washed and cut into bite size pieces
  • ½ cup yellow pepper, thinly sliced
  • ½ cup red onion, thinly sliced
  • Classic Caesar dressing, as needed
  • Parmesan cheese, as needed

Directions:

  1. In a plastic bag, combine chicken breasts and lemon herb salad dressing. Set in refrigerator and let marinate for 30 to 60 minutes.
  2. Place romaine lettuce in a large serving bowl. Top with yellow pepper and red onion.
  3. Grill the marinated chicken breasts until fully cooked.
  4. Cut chicken breasts into thin slices and lay over lettuce.
  5. Serve with classic Caesar dressing and Parmesan cheese to taste.

Barbecue Chicken Flatbread

This Southwestern-style flatbread – topped with chicken smothered in sweet and spicy barbecue sauce – is what your wild side is craving!

Ingredients:

  • 2 Tbsp. Simple Truth Organic™ Italian Extra Virgin Olive Oil
  • 1 Simple Truth™ Natural Boneless & Skinless Chicken Breast
  • Coarse salt, to taste
  • Freshly ground pepper, to taste

  • ¼ cup shredded mozzarella cheese

  • ¼ red onion, thinly sliced

Directions:

  1. Preheat oven to 450°F with rack positioned in center. Place baking sheet on rack.
  2. In medium skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper. Sauté chicken until cooked through, about 5 minutes per side.
  3. On plate, let chicken cool 5 minutes; cut crosswise into chunks.
  4. In medium bowl, combine chicken and BBQ sauce.
  5. Spread half of cheese on flatbread, then top with chicken. Spoon any remaining sauce from bowl over top. Sprinkle with onion and mozzarella cheese.
  6. Arrange flatbread on hot baking sheet. Bake until crust is crisp and cheese melts, about 8 minutes. Let stand 5 minutes before slicing.
